One-Pot Bacon Corn Chowder

10 servings

Ingredients


  • 16 oz bacon, chopped
  • 1 large yellow onion, diced
  • 4 large garlic cloves, minced
  • 6 sprigs fresh thyme, leaves only, minced
  • 2 lbs small red potatoes, diced
  • 1/4 cup all purpose flour
  • 6 cups chicken stock
  • 2 cups half and half
  • 3 cups fresh or frozen sweet corn
  • 1 tsp seasoned salt (I use Slap Ya Mama seasoning)
  • cayenne pepper, to taste
  • salt and black pepper, to taste
  • 2 cups shredded cheddar cheese, divided
  • chopped crispy bacon, for topping
  • chives, for topping


Instructions

Heat a Dutch oven over medium heat. Add the bacon and cook until crispy, stirring often. Remove half of the bacon grease from pan. Optional: Set aside a little cooked bacon for topping the soup once finished.
Add onion and cook for 5 minutes. Add garlic and thyme and cook for 30 seconds. Add red potatoes and sprinkle flour on top of potatoes. Stir to coat everything well.
Pour in the chicken stock and bring to a boil and boil about 12 minutes, until the potatoes are soft. Use a potato masher to roughly mash potatoes once cooked - this makes a thicker chowder. You want to leave some small chunks of potatoes when you are done roughly mashing.
Add the half and half and corn to soup. Season with seasoned salt, cayenne pepper, salt and pepper to taste. Bring to a simmer and cook for 5 more minutes.
Add cheese and stir to combine. Serve topped with chives, more cheese and crispy bacon!

Slow Cooker Jambalaya

Ingredients  


  • 2 large celery stalks , diced
  • 1 small onion , diced
  • 4 cloves garlic , minced
  • 1 green bell pepper , diced
  • 1 red bell pepper , diced
  • 16 ounces smoked sausage , chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 Tablespoon smoked paprika
  • 1/2 teaspoon cayenne pepper ( or more for extra spice)
  • 1/2 Tablespoon freshly ground black pepper
  • 2 (15 oz) canned diced tomatoes
  • 1/2 cup fresh parsley , roughly chopped
  • 2 cup vegetable broth ( chicken broth works as well)
  • 2 cups uncooked white rice


Instructions 


  • Add all ingredients into slow cooker EXCEPT the uncooked white rice.
  • Stir everything together. Place lid on slow cooker and cook on high for 3-4 hours. The liquid should be boiling at this point.
  • Very quickly stir uncooked rice into slow cooker. Quickly cover with lid and continue to cook on high for another 20-25 minutes, or until rice is cooked and has absorbed most of the liquid.
  • Serve hot with freshly chopped parsley and some hot sauce, if desired. Enjoy!

Slow Cooker Garlic Buttermilk Mashed Potatoes

Ingredients


  • 3 lbs Yukon Gold potatoes
  • 2-3 cups water
  • 5 garlic cloves peeled and smashed
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp butter
  • 1/2-3/4 cup buttermilk
  • 1/2-3/4 cup sour cream
  • 3 green onions sliced (optional)



Instructions


  • Scrub potatoes and cut into 1 inch pieces. The smaller potatoes I just throw straight in.
  • Combine potatoes, garlic, and salt in slow cooker. Add water just until covered.
  • Cook on low for 4 to 6 hours until potatoes are nice and tender.
  • Drain potatoes and return to slow cooker.
  • Mash potatoes and add butter, buttermilk, and sour cream. Continue mashing adding buttermilk or sour cream as necessary to achieve desired consistency.
  • Season with salt and pepper to taste and sprinkle with green onions if desired.

Loaded Scalloped Potatoes

Ingredients


  • 2 tbsp extra virgin olive oil
  • 2  onions medium, thinly sliced
  • 12 oz bacon cooked and crumbled
  • 4 tbsp unsalted butter
  • 4  tbsp  all purpose flour
  • 3 cups whole milk
  • 3 lbs potatoes thinly sliced (use Yukon or russet)
  • 8 oz cheese I used a combination of sharp cheddar and Gruyere, any cheese will work
  • salt and pepper to taste


Instructions


  • Preheat oven to 350F. Lightly grease a 9x13 or deep 9x9 baking dish with butter and set aside.
  • Add olive oil to a medium skillet and heat over medium heat. Add thinly sliced onion and salt and pepper, to taste. Cook over medium heat, stirring occasionally until onions become caramel in color. Remove from skillet and set aside.
  • Wipe skillet clean and cook bacon until crisp. You can alternatively bake the bacon while the onions are cooking, saving a little time. Remove bacon from skillet, drain grease, and wipe clean again.
  • Melt butter over medium heat. Sprinkle flour on top of butter and whisk to form a roux. Cook for 2 minutes.
  • Slowly add the milk, whisking constantly. Bring roux to a simmer and let thicken just slightly, about 2 to 3 minutes after coming to a simmer. Remove from heat and set aside.


**Assembly


  • Layer half of the potatoes, half of the caramelized onions, half the bacon, half the cheese, and half the sauce, in that order in the prepared baking dish. Repeat.
  • Cover baking dish with foil and bake for 1 hour. Remove foil and bak an additional 30 minutes or until potatoes are easily pierced with a fork. Remove from oven and let cool 10 minutes before serving.

Creamy Beef and Shells

Ingredients:


  • 8 ounces medium pasta shells
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1/2 medium sweet onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons Italian seasoning
  • 2 tablespoons all-purpose flour
  • 2 cups beef stock
  • 1 (15-ounce) can tomato sauce
  • 3/4 cup heavy cream
  • Kosher salt and freshly ground black pepper, to taste
  • 6 ounces shredded extra-sharp cheddar cheese, about 1 1/2 cups


Directions:



  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  2. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside.
  3. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute.
  4. Whisk in flour until lightly browned, about 1 minute.
  5. Gradually whisk in beef stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 6-8 minutes.
  6. Stir in pasta, beef and heavy cream until heated through, about 1-2 minutes; season with salt and pepper, to taste. Stir in cheese until melted, about 2 minutes.
  7. Serve immediately.
